Delicious Italian Christmas Recipe – Risotto

Hello, here we are again as always with something new, innovative and exciting. Today we are presenting you a recipe for “Risotto” a famous Italian dish for Christmas. This is just a small hint for you people to know how exciting a Christmas in Italy is.

“Christmas”, a day of holy faith, joy, happiness, pray to the god in church for giving us nice place to live. Christmas is only festival which celebrate in the whole world. And from this world one is Italy, famous for its traditional food, lifestyle, heritage places and festival celebration. The Christmas season in Italy goes for three weeks, but main celebration start from 8 days before. In these days People of Italy play instruments, sing songs and one more thing, they cook some delicious traditional Italian food. On Christmas they prepare some special dishes which are prepared since last many years as an Italian tradition. One of them is Risotto a typical Christmas Eve dish. Name contains Risotto but it is not cooked according to Risotto method but it combines cheese with fish. This dish is easy to cook but take long time. On this Christmas, l think you decide or not, just change your plan and surprise everybody by making Risotto de la “Visilia”. Do not worry about how to prepare and where is a recipe. Ingredients:


1. 3/4 pound firm fish fillets (such as redfish, wolffish, red snapper, goby, whiting, perch, or scup)
2. 2/3 cup dried borlotti, pinto, or Roman (about 6 ounces) beans, picked over, soaked in water to cover for several hours, and drained
3. One onion, very finely cut
4. Six tablespoons unsalted butter
5. One celery stalk, very finely chopped
6. One carrot, which peeled and very finely chopped
7. 1/2 cups Arborio rice
8. 1/4 cup freshly grated Parmigiano-Reggiano cheese
9. Two garlic cloves, crushed
10. One pound common eel (Anguilla anguilla), skinned and cut into 1-inch pieces
11. Six cups of water
12. Salt according to our taste.

Preparation:
Time – 2 hours

Step1 - Put the drained beans in a medium-size saucepan and cover by several inches with lightly salted cold water. Cook the beans over medium heat until soft but not breaking apart, about 1 and 1/2 hours, but check before that time. Pass half the beans through a food mill or pulse in short bursts in a food processor in and reserve. Set aside the remaining beans.

Step2 - In a large casserole or heavy saucepan, melt half the butter, then cook the onion, celery, and carrot over a medium heat for 6 minutes, stirring occasionally. Add the garlic, eel, fish, water, and salt and bring to a boil. Reduce the heat to medium and cook until the fish can flake easily, about 30 minutes (but don't flake the fish; keep them whole).

Step3 - Strain the broth through a fine-mesh strainer and return one quart of it to the casserole or saucepan. Stir in the pureed beans and mix well. Remove the fish and eel from the strainer and reserve, keeping warm, to serve as a second course.

Step4 - Bring the broth to a boil over medium-high heat and add the rice. Cook and uncovered it, until the rice is soft, about 20 minutes. Stir in the remaining butter, remaining beans and the cheese.

Now hot, delicious, and good looking Risotto is ready to serve. To make something new and of different taste on Christmas is like surprise for every one. And get good respond after tasting it, is great Christmas gift.
